Spinach Feta Mushroom Omlette

#Wifey, making sure I don’t bust calorie counters for breakfast. This is a spinach feta mushroom omelette w/swine. Yummy!

Nutrition Bits

This is a pretty basic meal, full of the things I like to have in a breakfast. Spinach is a miracle food! It essentially has no calories, carbs or sodium, and is chock FULL of vitamins and minerals. Spinach has a high nutritional value and is extremely rich in antioxidants, especially when fresh, steamed, or quickly boiled. It is a rich source of vitamin A (and especially high in lutein), vitamin C, vitamin E, vitamin K, magnesium, manganese, folate, betaine, iron, vitamin B2, calcium, potassium, vitamin B6, folic acid, copper, protein, phosphorus, zinc, niacin, selenium and omega-3 fatty acids. Recently, opioid peptides called rubiscolins have also been found in spinach. Spinach is also a rich source of Iron and Calcium!

If I could squeeze Spinach into all of my meals, I would. I think its just that important.

Bacon is also a staple of my breakfast, not too many calories, not too much fat or sodium. Just enough of those things. I should also note that the Feta cheese is not a full serving, there is less than a tablespoon inside of the omelet, and as a garnish on the top. Feta cheese is VERY high in fat and sodium, you don’t ever want to load up on it. The mushrooms are virtually invisible here, added for taste and texture.

None really! This is a lighter meal; it doesn’t have a lot of calories or protein. You will probably definitely need a snack or second breakfast before lunch…Not getting enough calories in your day can sometimes be as bad as getting too many.
